Chicken and Chorizo Jambalaya

Cooking time: 45 mins

Portions: 4

Ingredients:

600g chicken breast, chopped

1 link chorizo, chopped

300g rice

500ml chicken stock

Tin chopped tomatoes

Red onion, diced

Red pepper, chopped

Garden peas

2 cloves garlic, crushed

4 tsp Cajun spice

2 tsp chilli powder

Tbsp coconut oil

Instructions:

Heat the oil in a heavy based or large pot, brown the chicken, onions, garlic, and chorizo with half the spices. Add all other ingredients and bring to the boil then simmer, stirring occasionally to ensure it doesn’t stick to the bottom.

Cover and cook for 30 minutes or until rice has absorbed the liquid. Add the frozen peas and stir through until warm
